Instructions for Chicken Biryani:

Step 1: Marinating the Chicken

In a mixing bowl, combine the chicken pieces with yogurt, ginger-garlic paste, chili powder, turmeric powder, garam masala, and salt.

Mix the ingredients well, ensuring that the chicken is evenly coated with the marinade.

Cover the bowl with cling film or a lid and let it marinate for at least 2 hours, preferably overnight, in the refrigerator. This will enhance the flavors and make the chicken tender.

Step 2: Cooking the Rice

In a large pot, bring water to a boil and add the soaked Basmati rice.

Add bay leaf, cloves, green cardamom pods, cinnamon stick, and salt to the water for added fragrance.

Cook the rice until it is 70-80% cooked (it should still have a slight bite to it). Drain the rice and set it aside.

Step 3: Preparing the Biryani

1. In a heavy-bottomed pot or a biryani handi, heat the ghee or vegetable oil over medium heat.

2. Add the thinly sliced onions and saute until they turn golden brown and caramelized. Remove half of the fried onions and set them aside for garnish.

3. Add the marinated chicken to the pot and cook it on medium-high heat for 8-10 minutes until the chicken is partially cooked.

4. Layer the partially cooked chicken with half of the cooked rice. Sprinkle some saffron-soaked milk, fried onions, fresh coriander leaves, and mint leaves over the rice.

5. Repeat the layering process with the remaining chicken and rice. Top it off with the remaining saffron milk, fried onions, coriander, and mint leaves.

6. Cover the pot with a tight-fitting lid or seal it with dough to trap the steam inside.

7. Cook the biryani on low heat for 25-30 minutes, allowing the flavors to meld together and the chicken to cook through completely.

8. Once done, gently fluff the biryani with a fork, mixing the layers.

Serve the delectable chicken biryani hot with raita (yogurt salad) and some cucumber and onion slices on the side. This delightful and aromatic dish is sure to be a hit with everyone at the table.
