1 bay leaf

4-5 whole cloves

4-5 green cardamom pods

1-inch cinnamon sticks

Salt to taste

For the  Egg Biryani Gravy:

2-3 tablespoons vegetable oil or ghee

1 tablespoon ginger-garlic paste

2 medium tomatoes, finely chopped

1 cup plain yogurt

1/2 cup fresh coriander leaves, chopped

1/2 cup fresh mint leaves, chopped

Whole Spices and Ground Spices:

1 bay leaf

4-5 whole cloves

4-5 green cardamom pods

1-inch cinnamon sticks

1 teaspoon cumin seeds

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon garam masala

Salt to taste

Methods For Cooking:

Step 1: Boiling the Eggs

Place the eggs in a saucepan and cover them with water.

Add a pinch of salt to the water to prevent the eggs from cracking.

Bring the water to a boil and let the eggs cook for 8-10 minutes.

Once the eggs are boiled, remove them from the water, and let them cool. Once cooled, peel the shells and set the eggs aside.

Step 2: Cooking the Rice

In a large pot, bring water to a boil and add the soaked Basmati rice.

Add bay leaf, cloves, green cardamom pods, cinnamon stick, and salt to the water for added aroma.

Cook the rice until it is 70-80% cooked, with a slight bite to it.

Drain the rice and set it aside.

Step 3: Preparing the Biryani Gravy

In a heavy-bottomed pot or biryani handi, heat vegetable oil or ghee over medium heat.

Add cumin seeds, bay leaf, cloves, green cardamom pods, and cinnamon stick to the hot oil.

Saute the spices until they release their aroma.

Add finely sliced onions and cook until they turn golden brown.

Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they become soft and the oil starts to separate.

Mix in red chili powder, turmeric powder, and salt to taste.

Reduce the heat and add the plain yogurt, stirring continuously to ensure it blends well with the spices.

Gently place the boiled eggs into the gravy and let them simmer for a few minutes, absorbing the flavors.

Step 4: Assembling the Egg Biryani

Layer half of the partially cooked rice over the egg gravy in the pot.

Sprinkle half of the chopped coriander leaves and mint leaves over the rice.

Repeat the layering process with the remaining rice, coriander, and mint leaves.

Drizzled a few drops of saffron-soaked milk or rose water over the top for added fragrance and color.

Cover the pot with a tight-fitting lid or seal it with dough to trap the steam inside.

Cook the egg biryani on low heat for 25-30 minutes, allowing the flavors to infuse and the rice to cook completely.

Step 5: Serving the Egg Biryani

Gently fluff the egg biryani with a fork, ensuring the layers mix well. Serve the aromatic egg biryani hot, garnished with additional fresh coriander and mint leaves. Accompany it with raita (yogurt salad) or a side salad for a complete and satisfying meal.
