Ingredients: 

500g pumpkin (kaddu), peeled and diced

2 tablespoons mustard oil (or any cooking oil of your choice)

1 teaspoon cumin seeds

1/2 teaspoon nigella seeds (kalonji) (optional)

4-5 green chilis

1 onion

1 teaspoon garlic paste

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to spice preference)

1 teaspoon cumin powder

Salt to taste

1 tablespoon jaggery (optional, for a touch of sweetness)

 

Instructions: 

 

1. Prep Time (10 minutes):

 

Peel the pumpkin (kaddu) and dice it into bite-sized pieces. Set aside.

Prepare garlic paste, or use store-bought if available.

Cut onion in sauté slice and cut green chili

 

2. Cook Time (20 minutes): 

 

In a large pan or kadai, heat the mustard oil (or cooking oil of choice) over medium heat.

Add the cumin seeds and nigella seeds (kalonji) to the hot oil. Allow them to splutter and release their flavors.

 

3. Add Onion, Green Chili and Garlic Paste:

Lower the heat to avoid burning the spices, and add onion and green chili to the oil and fry it until it releases aroma then add the garlic paste to the mixture. Sauté for a minute until the raw smell disappears.

 

4. Add the Pumpkin:

2 medium potatoes, (julienne cut)

1 tablespoon cooking oil

1 onion (saute slice)

5 green chili, finely chopped (adjust to taste)

1 teaspoon cumin powder (optional)

 

Instructions:

Wash and peel the carrots and potatoes.

Using a sharp knife cut the carrots and potatoes into thin matchstick-like strips.

Cut onion in saute slice and chop the green chili. 

 

2. Cook Time (20 minutes): 

Heat the cooking oil in a kadhai or in a non-stick pan over medium-high heat.

Add the cumin seeds allow it to sizzle for a few seconds until release aroma.

Add onion and green chili and fry until it turns into brown color

 

3. Add Carrots and Potatoes:
