In this blog post, we will guide you through a simple and authentic recipe to make Rice Kheer at home in 15 minutes creating a soul-soothing dessert that will leave your taste buds wanting more.

Ingredients:

  1. To make Rice Kheer, you will need the following ingredients:
  2.  1/2 cup Basmati rice
  3. 4 cups whole milk
  4. 1/2 cup condensed milk (adjust to taste)
  5. 1/3 cup sugar (adjust to taste)
  6. 4-5 green cardamom pods (lightly crushed)
  7. A handful of chopped nuts(almonds, pistachios, cashews, etc.)
  8. A few saffron strands (optional, for a beautiful color and flavor)
  9. 1 tablespoon ghee (clarified butter)

Time: 45 minutes

How To Make Rice Kheer:

1.Washing the Rice:

Start by rinsing the Basmati rice thoroughly under cold water until the water runs clear. Soaking the rice for 30 minutes will help it cook faster and more evenly.

2. Cooking the Rice:

In a heavy-bottomed pan or a deep saucepan, add a tablespoon of ghee and let it melt over medium heat. Add the soaked and drained rice to the pan and gently sauté for a couple of minutes until the rice turns slightly opaque.

3. Infusing Flavors:

Pour in the whole milk and bring it to a gentle boil. Stir occasionally to prevent the rice from sticking to the bottom. Add the crushed cardamom pods and saffron strands (if using) to the milk. The cardamom imparts a beautiful aroma, while saffron adds a touch of color and flavor.

Special Tips: Add a pinch of salt in the milk. It will enhance the taste of Rice kheer into next level

4. Simmering the Kheer:

Reduce the heat to low and let the rice simmer in the milk. Stir occasionally to prevent the milk from scorching and to ensure the rice cooks evenly. Allow the rice to cook until it turns soft and the milk thickens, usually taking around 25-30 minutes.

5. Sweetening the Kheer:

Once the rice is fully cooked and the kheer has thickened to your desired consistency, it's time to sweeten it. Add condensed milk and sugar according to your taste preferences. Remember, the kheer will thicken further upon cooling, so don't make it too dense at this stage.

6. Adding the Nuts:

Garnish the Rice Kheer with a generous handful of chopped nuts. Save some nuts for topping when serving. The nuts add a delightful crunch and enrich the overall flavor.

7. Serving the Rice Kheer:

Turn off the heat and let the kheer cool to room temperature before refrigerating it. Serve the chilled Rice Kheer in individual bowls or cups, topped with more chopped nuts. Savor this delectable dessert with family and friends, relishing the heartwarming flavors of Indian tradition.
