1/2 cup plain yogurt

2 tablespoons ginger-garlic paste

1/4 cup chopped mint leaves

1/4 cup chopped coriander leaves

2-3 tablespoons vegetable oil or ghee

Whole Spices and Ground Spices:

4-5 green cardamom pods

1-inch cinnamon sticks

1 teaspoon cumin seeds

1 teaspoon fennel seeds

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon garam masala

Salt to taste

For the Rice:

2 cups Basmati rice (soaked in water for 30 minutes and drained)

4-5 cups water

1 bay leaf

4-5 whole cloves

4-5 green cardamom pods

1-inch cinnamon sticks

Salt to taste

Methods of Cooking:

Step 1: Preparing the Biryani Gravy

In a large pot or biryani handi, heat vegetable oil or ghee over medium heat.

Add cumin seeds, fennel seeds, bay leaf, cloves, green cardamom pods, and cinnamon stick to the hot oil. Let the spices release their aroma.

Add thinly sliced onions and sauté until they turn golden brown.

Stir in ginger-garlic paste and cook for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they become soft and the oil starts to separate.

Mix in red chili powder, turmeric powder, and salt to taste. Add Kashmiri Red chili powder for color.

Reduce the heat and add plain yogurt, stirring continuously to ensure it blends well with the spices.

Add diced mixed vegetables, chopped mint leaves, and coriander leaves. Mix everything together and let it cook for 5-7 minutes until the vegetables are partially cooked.

Step 2: Cooking the Rice

In a separate pot, bring water to a boil and add the soaked Basmati rice.

Add bay leaf, cloves, green cardamom pods, cinnamon stick, and salt to the water for added aroma.

Cook the rice until it is 70-80% cooked, with a slight bite to it.

Drain the rice and set it aside.

Step 3: Assembling the Veg Biryani

Layer half of the partially cooked rice over the vegetable gravy in the pot.

Sprinkle a few saffron-soaked milk drops for added color and fragrance (optional).

Repeat the layering process with the remaining rice.

Cover the pot with a tight-fitting lid or seal it with dough to trap the steam inside.

Cook the veg biryani on low heat for 25-30 minutes, allowing the flavors to meld and the rice to cook completely.

Step 4: Serving the Veg Biryani

Gently fluff the veg biryani with a fork, ensuring the layers mix well. Serve the aromatic and flavorful veg biryani hot, garnished with additional chopped mint and coriander leaves. Accompany it with raita (yogurt salad) or cucumber slices for a refreshing and satisfying meal.
