How to Make Seviyan Kheer:

Roasting the Vermicelli:

In a deep-bottomed pan, heat the ghee over medium flame. Add the roasted vermicelli and sauté until it turns golden brown. Roasting the vermicelli enhances its flavor and prevents it from turning mushy while cooking in the milk.

Boiling the Milk:

Special Hint: Add a pinch of salt, it will enhance the taste of Seviyan Payasam

Infusing Flavors:

As the milk starts to simmer, add the powdered cardamom seeds, which will lend a delightful aroma to the kheer. Drop in the saffron strands soaked in warm milk, infusing the kheer with a beautiful color and a subtle, fragrant taste.

Simmering the Semiya Payasam:

Reduce the heat to low and let the kheer simmer. Stir occasionally to ensure the vermicelli cooks thoroughly and absorbs the flavors of the milk. Allow the kheer to cook until the vermicelli becomes soft and the milk thickens to a creamy consistency.

Sweetening the Kheer:

Add sugar to the kheer, stirring continuously until it dissolves completely. Taste the kheer and adjust the sweetness according to your liking.

Adding the Nuts and Raisins:

Now, add the chopped nuts and raisins (if using) to the kheer. The nuts add a delightful crunch, while the raisins lend a burst of sweetness to each spoonful.

Serving the Saviyan Kheer:
